My Go-To Post Workout Lunch

I'm one of the lucky few who has Fridays free of both class and work. In the early afternoon I take a cardio kickboxing class at my gym, which is the best workout I have ever experienced. The instructor is phenomenal and the class is always small, forcing us to do all of the exercises to the best of our abilities. After a long shower, I get home and often find myself making the same thing. I am by no means a health expert, but this lunch combination makes me feel energized and ready to tackle the weekend in full force. The ingredients are easy to get a hold of and preparation takes no more than 10 minutes.

Substitutions can be made when it comes to smoothie ingredients and sandwich options. Frequently, I throw in some raw kale and blueberries into the mix. I used a magic bullet to blend up my smoothie. I also like to keep my two pieces of toast separate since the sandwich tends to get quite sloppy if you try and stack them. Eating them like this is relatively mess-free since the contents stay in the middle of the bread as you munch away.
